Meet the Chef
Simon Chen – Chef
Executive Chef and owner Wei Chen, better known as Simon, has over 30 years of experience. He has worked for companies large and small, in both restaurants and catering. His experience in the kitchen begins in Washington D.C. In our nation’s capital he worked his way up from small companies as a line cook to Seasons Culinary Services that catered to law firms of over 2000 people daily as the Executive Chef and General Manager. Since moving to South Florida with his family in 2004 he has worked at Ta-boo, a restaurant in Palm Beach, Florida as the Executive Chef as well as Carmine’s Gourmet Market & La Trattoria in Palm Beach Gardens, Florida.
Simon also has experience as the Chef and Chief Executive Officer of his own restaurant. Through his own restaurant he created high-end seafood recipes for many – combining his Chinese background with fresh from Florida seafood. His expertise in cooking ranges from French and Italian cuisine to authentic and traditional Chinese, Vietnamese and Thai cuisine. Whether it’s the ballroom or the boardroom, his experience and creativity is sure to leave your mouth watering for more.
